Comer Granola Bars

This recipe came about when my Amazing Ann needed a healthy snack for school. I combined several other versions and tweaked them until I got this.

Turn on your broiler or preheat oven to 400 degrees. While things are warming up, gather your ingredients below.

2 cups oats

3/4 cup wheat germ or flax seed

1 cup nuts crushed, optional. I leave this out for school allergies.

2/3 cup brown sugar

1/2 cup honey

4 Tbsp butter or coconut oil

2 tsp vanilla or another other flavored extract

1/2 tsp salt

½ to ¾ up of dried fruit, chocolate chips or other yummy add in.

Take an 8×8 pan and line with foil or wax paper that overlaps the sides. The overlapping paper acts as the handle to which you are going to need to get this sticky project out of the pan.

Toast oats, nuts and germ/flax seed until golden brown stirring often to prevent burning. When everything is golden brown, remove from oven and add fruit. In a small sauce pan melt sugar, honey, butter, extract and salt until small bubbles form. Dump dry ingredients into prepared pan. Pour liquid ingredients over dry mixture and stir until combined. Use a metal spoon to spread the mixture to all four corners. If it stick, spray the soon with cooking spray. For some reason a metal spoon works wonders on this project.

Wait 2 – 3 hours, cut and enjoy! I tend to individually wrap pieces and freeze.
